Make Tea: Make tea of by soaking the chocolate and crystal malts for 30 minutes. Collect liquid and pour through stainless steel strainer.
Boil Wort: Boil pale and light malt extracts, adding liquid from tea above. Boil for 15 minutes. Add 1 ounce of northern brewer hops and boil and for 30 minutes. Add 1 ounce of northern brewer hops and boil for another 30 minutes. Add 1 ounce of cascade hops and boil for final 30 minutes.
Pitch Yeast: Tranfer to carboy through wort cooler. Add yeast.
Dry Hop: 9/11/99 - Add 1 ounce cascade hops to carboy.
Oak Age: 9/23/99 - After 7-10 days of dry hop, add 1 1/2 tablespoon of oak chips. Place in cool environment for 1 month.
Bottle: Prime with 2/3 cup honey. Bottle with into 22 ounce brown bottles.
