I love French fries as much as the next person, except when they taste like potato chips, or are overly seasoned, or just plain too thin.... Ok, I am picky about my potatoes including the nutrition disaster that deep fat frying causes. So, here's the easy overn version that gets past all of my picky requirements.

Ingredients:

  • 2 large baking potatoes, pealed or not, cut into 1/2" strips
  • 2 T canola oil 
  • spud spices such as salt, pepper, paprika, etc.

Preparation:

  1. Preheat oven to 450*F. 
  2. Dry potato slices with paper towel
  3. Place potato slices on a rimmed baking sheet. 
  4. Toss with oil and spread out in a single layer.
  5. Bake until tender, turning half way, until browned all over (25-30 minutes total)
Nutrition:
Each serving is 140 calories with only .5 g of fat! Limit the salt in the seasoning used will keep the sodium content down.
Notes:
Yield for this recipe is 4 servings. Since the 2 potatoes will be about 1 pound, that's a hefty 1/4 pound serving size.
