Easy Italian Heb Focaccia photo of finished dish not available
I don't think I possess the patience or precision to be a good bread baker. Thanks to my mother and mother-in-law, I have an automatic bread maker which I rely on for homemade loaf breads. But this recipe is one that I can handle with success! It was icluded with a grocery store coupon for the King Arthur flour which is what I use with the automatic bread maker.The Italian seasoning dry mix can be from any source, but just make sure it contains no added salt. The seasoning is added to the top of the loaf, after rising, so I wonder about including some seasoning in the loaf - I'll just have to get adventurous at some point. Also up for consideration is putting other stuff on top like garlic cloves, basil leaves, roma tomato slices, etc.

Ingredients:

  • 3-1/4 C King Arthur All-Purpose Flour
  • 1 envelope of Fleischmann's RapidRise Yeast
  • 1 T sugar
  • 1 tsp. salt
  • 1/4 C extra virgin olive oil, divided
  • 1-2/3 C very warm sater (120-130*F)
  • 2 T shredded Parmesan cheese
  • 1 T Spice Islands Italian Herb Seasoning

Preparation:

  1. Mix flour, undissolved yeast, sugar and salt in a large vowl. 
  2. Add 2 tablespoons olive oil and water, stirring until well mixed. 
  3. Spread dough into a greased 13x9-inch baking pan. 
  4. Cover and let rise until doubled, around 30 minutes if the kitchen is not too cool.
  5. Poke mutliple holes into the dough using the handle of a wooden spoon.
  6. Drizzle 2 tablespoons of olive oil over dough: sprinkle with Parmnesan cheese and Italian herb seasonsing.
  7. Cover and let rise an additional 15 minutes
  8. Preheat oven to 375*F. 
  9. Bake 30-35 minutes until lightly browned.
  10. Cool slightly and cut into slices, serve warm.
Nutrition:
Hey, it's bread! Carbs and calories are ample, probably around 150-200 calories per 1/2" slice. I'm not sure what switching to whole wheat flour would do to the taste, but adding some ground flax might not hurt. Just be sure to serve this with other low calorie and low carb foods at the same meal.

Yield is 8 servings, depending on size of slices.
