|Recipe appeared in the local "Coffee News" in an issue that Jim picked up in 2008. These are basically easy chocolate chip cookies with coffee flavor added. I plan to experiment with this recipe to get an espresso version to mimic the cookies I love from Whole Foods.|
Butter and sugar are the primary calories in this recipe. Using a healthy spread and sweetener which are good for baking, would help this recipe. The dark chocolate and nuts are healthy indulgences, but using a chopped nut that has greater health benefits, such as almonds, walnuts or macadamia would be an improvement.
Depends on size of dropped dough. Probably best if thin and a little crispy on edges.
