Coffee Cookies coffee cookies image
Recipe appeared in the local "Coffee News" in an issue that Jim picked up in 2008. These are basically easy  chocolate chip cookies with coffee flavor added. I plan to experiment with this recipe to get an espresso version to mimic the cookies I love from Whole Foods.
Ingredients:
  • 5.5 oz butter
  • 1/2 cup coffee
  • 1 tsp. vanilla
  • 1-1/4 cup flour
  • 2 oz chopped hazelnuts
  • 2 oz plain dark chocolate [chips]
  • 5 oz sugar
  • 1 egg
  • 1 tsp baking soda
Preheat oven to 350F. Mix sugar and butter until smooth, then add additional dry ingredients and mix thoroughly. Add the egg, vanilla extract, coffee, nuts, and chocolate. Use a spoon to drop dough onto a greased cookie sheet. Bake 'till done.

Butter and sugar are the primary calories in this recipe. Using a healthy spread and sweetener which are good for baking, would help this recipe. The dark chocolate and nuts are healthy indulgences, but using a chopped nut that has greater health benefits, such as almonds, walnuts or macadamia would be an improvement.
Yield:
Depends on size of dropped dough. Probably best if thin and a little crispy on edges.
