Honey-Glazed Carrots photo of finished dish not available
Here's an easy way to use those baby carrots besides as a crudite. I also like this recipe because it used honey, which I know if the highest antioccident sweeter. I suggested adding carmelized onion to this recipe too.

Ingredients:

  • 2 T olive oil
  • 1-1/2 pounds carrots, cut into 1/4" slices (or whole baby carrots)
  • 2 T of honey
  • Freshly ground back pepper.

Preparation:

  1. Heat oil in skillet over medium-high heat
  2. Add carrots and salt to taste
  3. Saute for 2 minutes
  4. Cover and reduce heat to low. Cook until tender for about 15 minutes. Add some tablespoons of water if sticking.
  5. Add honey and toss to coat.
  6. Season with pepper to taste.
Nutrition:
154 calories per serving and most of the calories are sugars both from the carrots and the honey, a little from the olive oil. But there's 4 grams of fiber and very low sodium.
Yield:
4 servings from this recipe without the onion. Total time about 30 minutes.
